In July, The Golden Fork Restaurant in Rabat hosted an exclusive event in close collaboration with Divino Wines and Spirits, titled "A Wine Story with a Thousand Controversies." This captivating evening offered guests a rare opportunity to explore the rich and intertwined histories of Italian and Greek wine cultures through a carefully curated selection of wines and an exquisite tasting menu designed to complement the evening’s theme. The evening was supported by Sommelier Fabien Etienne.
A Cultural Journey through Wine and Cuisine
The event was more than just a wine tasting; it was an immersive experience that highlighted the historical and cultural connections between Italy and Greece, two regions whose wine industries have influenced each other for centuries. The Italian and Greek wine traditions share a deep-rooted history, with ancient viticulture practices in both regions contributing to the development of distinctive wine styles. Italian and Greek wines, while unique in their own right, are both products of Mediterranean terroirs, and have often borrowed techniques, grape varieties, and even trade routes from one another.
Throughout the evening, guests were treated to a selection of fine wines, each telling its own story of heritage, craftsmanship, and controversy. The wines were thoughtfully paired with a menu that echoed the evening’s theme, further enhancing the connection between the two cultures.
The Wines and Their Stories
Atlantis Argyros White – 2022: This crisp and refreshing Greek white wine set the stage for the evening, offering guests a taste of Santorini’s volcanic soils. Its bright acidity and mineral notes were a perfect introduction to the complex flavors that would follow.
Estate Argyros Cuvee Monsignori - 2020: Another gem from Greece, this wine showcased the depth and elegance of Assyrtiko grapes, with a sophisticated balance of fruit and acidity that echoed the harmony found in Italian whites from regions like Sicily.
Avignonesi – Vino Nobile di Montepulciano - 2018: Transitioning to Italy, this Tuscan classic brought the rich, earthy flavors of Sangiovese to the table. Known for its robust structure and smooth tannins, it highlighted the parallels between Italian and Greek winemaking philosophies.
Avignonesi – Desiderio – 2018: This bold Italian red, a blend of Merlot and Cabernet Sauvignon, demonstrated the innovation within the Italian wine industry, where tradition meets modernity—a concept mirrored in Greece's evolving wine scene.
Estate Argyros – Vinsanto – First Release 2015: The evening concluded with a sweet note, as this luscious Greek dessert wine showcased the ancient method of sun-drying grapes, a technique shared by both Greek and Italian winemakers to produce concentrated, richly flavoured wines.
The Culinary Experience
The wine selection was expertly paired with a six-course tasting menu crafted by The Golden Fork's chefs, designed to complement and elevate the complex flavours of the wines:
Salted Foie & Black Pudding Terrine: A rich and luxurious dish that paired beautifully with the crisp Atlantis Argyros White, cutting through the richness with its vibrant acidity.
Sweet Scallops, Pear & Coriander: The sweetness of the scallops and pear was balanced by the fresh, zesty notes of the Cuvee Monsignori, creating a harmonious interplay of flavours.
Spicy Stir-Fried Octopus, Caught Fish of the Day, Beetroots: This dish brought the heat and paired perfectly with the robust Vino Nobile di Montepulciano, whose deep, earthy notes matched the spiciness and depth of the seafood.
Local Pork Loin: A celebration of Maltese produce, this dish was complemented by the bold flavours of the Avignonesi Desiderio, with its powerful tannins cutting through the richness of the pork.
Venison Smoked Over Juniper, Black Garlic Aioli, Rhubarb, Cherry Vinegar: The gamey flavours of the venison, enhanced by the smokiness and tartness of the accompaniments, were elevated by the Vinsanto’s sweet, concentrated flavours, offering a delightful contrast.
Salted Caramel Chocolate Tart, Tonka Bean Ice Cream: The evening ended on a high note with this decadent dessert, perfectly paired with the Vinsanto, whose sweetness and complexity mirrored the tart’s richness.
